Quality of bee honey (Apis mellifera L.) Produced in locations of the municipality of el Salvador

Abstract
The study addressed the issue of ensuring the quality of honey produced by Apis mellifera L. in various localities of the municipality of El Salvador, given its economic and nutritional importance. The objective was to evaluate the physicochemical and microbiological characteristics of the honey to determine its compliance with international quality standards. Honey samples were collected from several localities in the municipality and analyzed for physicochemical parameters such as pH, moisture content, sugar content, acidity, and electrical conductivity, as well as microbiological parameters to identify potential contaminants. The analyses were conducted following official methods established by international standards such as the Codex Alimentarius. The results showed that most samples met quality standards, although some exhibited slight deviations in moisture content, which could affect their stability and shelf life. No microbiological contaminants were detected at concerning levels, supporting the product's safety for human consumption. It was concluded that the honey produced in the municipality of El Salvador is of high quality, with characteristics suitable for local and international commercialization. However, it is recommended to improve handling and storage practices to prevent issues related to moisture.
